Who is ICE?

ICE is a world class, award winning culinary and hospitality school in Brisbane, Queensland. In 2013, Alison and Steve Taafe had a dream of opening a culinary school that was different from the rest. Their vision was to create a  school where students could come to learn in a comfortable, encouraging, supportive and inspirational environment. ICE has some the best teachers in the business, who spend every day helping ICE students to become the best version of  themselves and to excel in their chosen career.

Alison and Steve’s vision was for ICE to become a ‘culinary family’ and they have truly succeeded. Students instantly become part of their ‘ICE Family’ and are often heard saying that they have found their culinary home at ICE. Even when they leave after qualifying, they are always welcomed back at any time for any reason. And they do come back too!

Over the last 6 years, ICE has grown rapidly from only having 8 apprentice chefs in the very first class with Alison in 2014, to having trained over 1500 student chefs.

Training Awards

In 2018 ICE were named the ‘Small Training Provider of the Year’ in Queensland. It was such an honour to win this prestigious award and everyone associated with ICE was so humbled and overwhelmed with excitement. All the staff were so grateful that their hard work and perseverance had been recognised and had paid off. The same year ICE were one of only 3 state finalists in the Australian Training Provider of the Year in Sydney. ICE were the runners up but the best thing was the national Minister for Training named ICE as the very Best Culinary School in Australia, which was incredible and an amazing feat for a small culinary college that’s only been open for 6 years!

We offer our chef students the opportunity to win the annual ICE Apprentice of the Year Award, that sees our winner go overseas on a culinary trip of a lifetime. Previous winners have staged at The Waldorf Astoria, The Gramacy Tavern, Cosme, Runner and Stone Bakery, Thomas Keller’s Per Se, Daniels, Le Bernadine, NoMad and the number 1 restaurant in the world: Eleven Madison Park all in 3 Michelin Starred restaurants in New York City.

We continually push the boundaries at ICE and deliver our training in a modern, innovative and exciting way. Our programs include excursions to off-site farms, markets, factories and visiting local producers.
